Dal Tadka is one of the most popular Indian dishes amongst the lentils served in Indian restaurants in Ottawa. Lentils are a high source of protein and basically the only source of protein if you are vegetarian. Dal Tadka consists of 2 to 3 types of dal that are tempered in oil or Indian butter, commonly known as ghee with Indian herbs of all kinds.
The frying of these herbs along with species releases their essential oils, flavours and aroma into the oil/ghee. Once this flavoured Indian mix is ready, it is added to prepared lentils along with some fresh vegetables. This completely changes the aroma and the taste of the dish. This is then served with steaming hot cumin rice called Jeera Rice.
This is one of the most delicious Punjabi style one-pot mushroom Curry that includes white button mushrooms in a spicy onion-tomato gravy that has authentic Indian spices with a hint of garlic to get the sour, bitter flavour with a pungent spicy taste. Something unique, eh?
The presence of onion in the gravy gives a caramelized taste that gives a deeper, richer flavour in the gravy. At Mehfil Indian Cuisine, we also add some yogurt to give the gravy a smooth consistency and a flavourful taste!
The term “Saag” is a Punjabi word that literally translates to green. Saag is referred to as the common leafy green vegetables that are found in the Indian subcontinental regions. These leafy greens are:
- Mustard greens
- Collard greens
- Basella or Malabar Spinach
This particular recipe requires quite much investment of time and pretty much all the attention to have all the leafy greens finely chopped and must blend with each other along with all the species. Though, it seems that with so many leafy greens, the curry must taste awkwardly bitter but with an adequate amount of time and spices, the end result is a creamy, green saag, bursting off of mellow greens and flavours that have abundant vitamins and proteins.
